BAY LEAF-INFUSED MASHED SWEET POTATO
- 2 sweet potatoes
- 2 bay leaf
- 2 Tbsp butter / margarine
- ½ can coconut cream
- 1 tsp honey
Preheat oven to 200°. Thoroughly wash sweet potatoes. Prick with a fork multiple times and place on baking tray. Oven bake for 20-30mins, until sweet potatoes are soft. Take out of oven and let cool down.
In a pot, heat the coconut cream and add the bay leaves. Do not bring to boil. Simmer for 5-10mins.
Peel off the sweet potato skin. Place peeled sweet potato in a bowl, and roughly mash potatoes, add the bay leaf infused coconut cream, and butter / margarine and continue mashing. Drizzle some honey, and add salt and pepper to taste. Mash until your desired consistency.
