Sweet Potato, Spring Onion and Sweet Pepper Savoury Muffins
2 cups self raising flour 500g sweet potato 3 spring onions 100g sweet peppers 50g cheddar cheese or coconut cheese – grated 1 cup full cream milk or almond milk 2 tsp salt 2 tsp ground pepper 1 tsp brown sugar 2 eggs or ½ cup soya yogurt
Preheat oven to 200°C.
Coat muffin tins with cooking oil or butter.
Peel and grate sweet potatoes. Finely chop spring onions and sweet peppers.
Sift flour into a bowl. Mix in sweet potato, cheese, spring onion, sweet pepper and salt, sugar and pepper.
In a bowl, whisk milk and eggs or yogurt together. Then, add to dry ingredients and mix through until just combined. Spoon into prepared muffin pan.
Bake for 25 – 30 minutes until muffins are firm and a knife inserted into the centre comes out clean. Allow to cool in the tin for a few minutes then turn onto a wire rack.
