Roasted Green Beans with Sage


250g green beans
2 shallots/spring onion bulbs
2 garlic cloves
100g butter or margarine
½ bunch fresh sage


Preheat oven to 180°C.

Trim the tops and bottoms off the green beans and roughly chop the shallots into quarters.

Combine green beans, shallots and crushed garlic cloves.

In a pan on low heat, slowly melt butter, do not burn. Add the sage leaves and toss, leaving to simmer for 2-3 minutes. Add sage and butter to the green bean bowl and season with salt and pepper. Toss to evenly incorporate. Transfer beans to a large baking sheet.

Roast beans in oven for about 1 hour, stirring every 10 minutes, until wilted, shrunken, and browned at edges.
