Grapefruit and Rosemary Sorbet

A great pallet cleanser after any meal or a refreshing sweet snack on a hot summers day.


1 cup freshly squeezed grapefruit
1 cup sugar
¾ cup water
2 tsp lemon juice
1 fresh rosemary


In a small pot, add water, sugar and rosemary boil for 2-3 minutes. Take off heat and allow to cool down. Strain liquid to remove rosemary. 

Once at room temperature, add freshly squeezed grapefruit juice and lemon juice. Using a hand blender, mix together – make sure it becomes frothy. 

Pour into a freezable container and place in freezer for about 45 minutes. Check the mixture and stir vigorously for about a minute, and freeze again for another 1 hour or so. Consistency will be slushy.
