Bay Leaf Infused Mashed Sweet Potato


3 large sweet potatoes
3 bay leaves
2 Tbsp butter / margarine
½ can coconut cream
1 tsp honey


Preheat oven to 200°C.

Thoroughly wash sweet potatoes. Prick with a fork multiple times and place on baking tray. Oven bake for 20-30 minutes, until sweet potatoes are soft. Remove from oven and let cool down. 

In a pot, heat the coconut cream and add the bay leaves. Do not bring to boil. Simmer for 5-10 minutes. 

Peel off the sweet potato skin. Place peeled sweet potato in a bowl, and roughly mash potatoes. Add bay leaf infused coconut cream and butter / margarine, and continue mashing. Drizzle some honey, and add salt and pepper to taste. Mash until your desired consistency.
