LEMON AND ORANGE BARS
This recipe will satisfy any sweet tooth – packed with a zesty punch of flavour!
Ingredients
- 200g butter
- 2 ¼ cups of all purpose flour
- ½ tsp baking powder
- 1 cup caster sugar
- ¾ cup sugar
- 4 large eggs
- ¼ lemon juice – freshly squeezed
- ½ oranges juice – freshly squeezed
- lemon zest
- orange zest
Method
Preheat oven to 180°C. Grease a rectangular baking tray or line with baking paper.
Mix 2 cups flour, caster sugar and butter until combined. Add about 1 Tbsp lemon zest and 1 Tbsp orange zest and combine. Press mixture into the base of the baking tray. Place in oven and bake for 15 minutes.
In a large bowl, whisk eggs and sugar. Once combined add lemon juice and orange juice and ½ Tbsp orange zest. Mix once again. Now add ¼ cup flour and baking powder and whisk well – making sure there are no lumps.
Pour mixture on to base and bake for 25 minutes. Remove from oven and allow to cool – refrigerate for about 2 hours before removing from the tray and slicing into cubes.
