INDIAN-STYLE CUCUMBER FRITTERS

This wonderfully quirky recipe was recommended by our good friend Nichola – who had tried it with much delight! Recipe created by Alex Skeate, who along with Mike Sherman (Illustrations) and Daena Weeks (Design) wrote and curated a little cook book called Becoming You – One Body Only Health, Vol 1.

Ingredients

  • 50ml chickpea flour
  • 30ml rice flour
  • 1 tsp cumin spice
  • 1 tsp dried chilli
  • 1 clove grated garlic
  • 1 cup grated cucumber
  • 5g chopped basil
  • ⅓ tsp baking powder 20ml olive oil
  • black pepper
  • ½ tsp salt

Method

In a bowl, add the grated cucumber and salt and allow it to stand for 5min. Next, add the dry ingredients, grated garlic and olive oil and mix together to create a batter. Fold basil into the mixture and let it stand for an extra 10min.

In a pan drizzle some olive oil and heat to medium temperature, testing with a drop of batter. Spoon 2 Tbsp of batter per fritter to the hot pan and fry on each side for 3min until golden and fluffy. Repeat until all the batter is finished. Serve and enjoy with hummus and your chosen side.
