Garlic scapes are mild and sweet but have a definite garlic flavour that is more gentle than the actual clove. They are quite versatile and can be used in many recipes.


  • 3 garlic scapes, finely chopped
  • 2 tsp white wine vinegar
  • 2 tsp fresh lemon juice
  • 2 Tbsp extra-virgin olive oil
  • ground black pepper


Finely chop garlic scapes and combine with a pinch of salt in a large bowl. Mash to a paste with a fork. Add vinegar, lemon juice and then the oil; season with salt and pepper. Whisk to mix together.

Add salad and toss to coat evenly.
