CUCUMBER AND MELON SALAD WITH A CHILLI AND HONEY DRESSING
I came across this recipe when looking for interesting ideas for what to do with cucumbers. This recipe, which I’ve adapted slightly from the original, is wonderfully whimsical and a juicy taste explosion.
Ingredients
- 2-3 mediterrean cucumbers
- 2 cayenne chillies
- 2 Tbsp white wine vinegar
- 2 tsp honey
- 2 Tbsp olive oil
- ½ spanspek
- 150g feta
- ½ cup basil leaves
- salt
- freshly ground pepper
Method
Remove the rind from the melon and cut into long thin slices – a sharp knife or even a peeler will work. Julienne the cucumbers. Place melon and cucumbers into a bowl.
Cut feta into thin blocks and add to the bowl. Roughly chop basil leaves and sprinkle on the salad mix.
Dressing:
Finely chop the cayenne chillies. Whisk chillies, vinegar and honey in a small bowl. Gradually add in the olive oil, whisking constantly until mixed together; generously dressing with salt and pepper, according to taste.
Now drizzle dressing over and gently toss to coat salad.
Enjoy immediately or within a day if kept refrigerated.
